INGREDIENTS
1 tablespoon unsalted butter
1 tablespoon chopped chives, optional
1/4 teaspoon dried herbs of your choice or dried thyme
1 tablespoon whole milk
2 large eggs
Pinch of salt
Pinch of freshly ground black pepper
1/2 cup grated cheddar cheese
DIRECTIONS
In a large mug, combine the butter, chive, and herbs of your choice and microwave for 15 seconds, or until the butter has melted. Add the milk and eggs and whisk until frothy. Stir in the salt, pepper, and cheese. Microwave for another minute, until the egg is firm. Serve immediately.
